MARCO PIERRE WHITE
Marco began his classical training under Albert Roux and Michel Roux at La Gavroche. At 24 Marco became head chef and joint owner of Harveys with a kitchen staff that included the young Gordon Ramsay & Heston Blumenthal. Dubbed ‘The Godfather of Modern Cooking’, Marco became the first English chef to win 3 coveted Michelin stars at the tender age of 33.
GERALDINE FITZPATRICK
Geraldine, a founder director of the Fitzers Restaurant Group, began working in the family Fruit & Veg business at an early age. She has been involved in the Food & Drink business ever since. Geraldine & her fellow Directors have been business partners and friends of Marco’s for a number of years. The Dawson Street Steakhouse is the first of a number of planned ventures between the two in Ireland. Click

GINA BOKIN
Gina is from Dublin and has worked for the Fitzers group for vast majority of her career. Having worked in all areas of the restaurant business over the past twenty years, Gina has gained extensive knowledge of food and wine and service. Gina’s passion and drive has seen her rise through the ranks to her current position of General Manager. Gina has visited Marcos London restaurants on many occasions and her most recent trip to London included an evening in ‘Hells Kitchen’.
NIALL BYRNE
Niall is from Galway and is a graduate from Galway/Mayo Institute of Technology. After working in Chapter One as senior Chef De Partie. Niall began working with Fitzers on Dawson Street in 2005 as Sous Chef and a promotion to Head Chef quickly followed. Prior to opening the Marco Pierre White Steakhouse and Grill, he has been based in London where he trained under the “Michelin Star” Chef himself, hence bringing his expertise directly to the Steakhouse on Dawson Street.
